Six steps, zero shortcuts

How churpi is made

It's simple, but it's patient work. Most of the magic is time.

  1. Collect the milk

    Fresh yak and cow milk from Himalayan herds.

  2. Boil

    The milk is heated together in big pots.

  3. Curdle

    Lime juice separates the curd from the whey.

  4. Drain

    The curd hangs in cloth until the whey runs off.

  5. Press and cut

    Pressed firm under weight, then cut into bars.

  6. Dry

    Dried slowly until rock hard.
